Dare I say, this fried egg salad with spicy mayo is my new favorite egg salad recipe. In less than the time it takes to cook and peel your hard boiled eggs, you’ll have the entire egg salad sandwich made and scarfed down. Making egg salad with fried instead of hard boiled eggs result in soft, creamy yolks and crispy edges that are a delicious change to the classic egg salad. This recipe is seriously the best solution for people like me who have passed on making an egg salad because we’re too lazy to peel some eggs!
I usually prefer my egg salads with some hot sauce drizzled on each bite. There’s something about adding hot sauce to egg or tuna salads that complete a sandwich for me. In this fried egg salad recipe, I decided to mix in some spicy mayo. Spicy mayo is basically mayo mixed in with some hot sauce, usually Sriracha. Adding spicy mayo straight into the egg salad makes it so much easier to eat. I love the added spiciness and acidity that spicy mayo adds to this egg salad recipe. If you don’t have Sriracha or prefer using a tangier hot sauce, Tabasco or Texas Pete would be delicious alternatives. However, feel free to skip the hot sauce all together for a milder egg salad.
What you need to make this fried egg salad recipe
- 2 eggs
- 1 slice of cheese (I prefer using a white cheese such as Swiss, provolone, or harvati)
- 1 tablespoon mayonnaise (I prefer using Japanese Kewpie mayo but any mayo will work)
- 1 teaspoon Sriracha (optional to skip the hot sauce or use your preferred hot sauce)
- 1 tablespoon garlic spread (I love the one from Trader Joe’s or Whole Foods)
- 1 teaspoon dijon mustard
- salt and pepper
How to make fried egg salad sandwich
- Fry eggs over medium – First add two tablespoons of oil to a frying pan. Heat oil using high heat. When oil is hot, crack in two eggs side by side. Try to keep the two eggs separate. Sprinkle with a little bit of salt and cracked black pepper. Cook on one side for two minutes. After the two minutes have passed or sides of eggs are crispy and whites being to firm, flip eggs. Let eggs cook for another 15 seconds. Turn off heat and let eggs sit in pan for another 1 minute or so before removing. If you prefer a hard yolk center, cook eggs for 2 minutes on the second side, turn off heat, and then remove eggs from pan.
- While eggs are cooking, toast two slices of bread if you are serving as a toasted sandwich. This egg salad sandwich is also delicious on plain bread or a crusty baguette.
- Place fried eggs into a bowl and use food scissors to cut eggs into small bite sized pieces. Add in mayo, sriracha, garlic spread, and dijon mustard. You can also add in more salt and pepper to taste if you prefer. Mix everything together.
- Serve egg salad with bread, crackers, or with a simple salad!
