These pumpkin blondies are an essential fall treat! They have just the right amount of pumpkin taste and the cornflakes add a nice crunch throughout the blondies. Serve cold or warm with a scoop of vanilla ice cream for a perfect addition to your Thanksgiving dessert spread!
New York City was one of the first places Archie and I traveled to as a couple. It was the winter of 2011, and we were young, broke but so badly wanted to travel and explore this big world. We had both grown up with parents who enjoyed traveling. Both of our parents had made it a priority to budget in a family trip whether big or small every year, so it was only natural that traveling became a big part of our own relationship from the start.
At the time, I was fresh out of undergrad and basically jobless. Meanwhile, Arch was in his last year of law school and was scraping by on student loans. I don’t know how we managed to justify the big purchase, but young and recklessly, we booked a last minute winter trip to NYC.
There are three things that I always associate and laugh about from the trip. The first was our tiny hotel room that had bed bugs on the twin bed we had shared. The second was the huge fight we had gotten into after Arch refused to ask a stranger for directions. The third was how I fell in love with Milk Bar’s cereal milk soft serve.
Despite, the crazy cold winter NYC was having that year, I had ice cream and it was one of the best things ever. Growing up, I had never been a milk and cereal kind of girl, and if I had to choose, cornflakes would definitely not been my first choice!
However, Milk Bar’s soft serve topped with cornflakes BLEW MY MIND and since that day, I have found any excuse to add cornflakes to just about anything. So of course, the little baker in me had to whip up pumpkin cornflake blondies for the most perfect fall dessert!
Pumpkin Blondies with Cornflakes
Ingredients
- 2 1/2 cups flour
- 15 oz pumpkin puree
- 1 egg
- 1 cup melted, unsalted butter
- 1/4 cup white sugar
- 1 cup butterscotch chips
- 1 cup cornflakes
- 1 tbsp vanilla extract
- 2 1/2 tsp cinnamon
- 3/4 tsp ground ginger
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F
- Line a 9×13 inch baking pan with parchment paper
- Mix flour, ginger, cinnamon, allspice, nutmeg and salt in a bowl
- In a separate bowl, mix butter, brown sugar and white sugar together. Add in egg and vanilla. Make sure there are no lumps and egg is completely mixed in. Mix in pumpkin puree.
- Combine the flour mixture with the wet mixture. Mix until mixture is smooth and blended.
- Add in cornflakes and butterscotch chips and mix until evenly distributed
- Pour batter into the parchment paper lined baking pan. Spread mixture evenly in pan. Add additional cornflakes on top of batter mixture.
- Bake for 40 to 50 minutes or until chopstick comes out clean when inserted in the middle of blondies.
- Let blondie cool on wire rack before cutting. Voilá, enjoy!
