Sambal chicken, better known in Indonesia as ayam suwir pedas, is a delicious and easy spicy chicken recipe. Filled with lots of shallots, garlic, and chilis, this Indonesian chicken recipe is spicy, sweet, and tangy. This recipe is a great way to use up leftover chicken. For this dish, you can use any store bought Indonesian sambal and adjust the recipe accordingly, however, I love making this spicy chicken dish with my quick homemade Indonesian sambal recipe.
What you need to make sambal chicken
- 2 cups of your favorite Indonesian sambal bawang. My homemade sambal recipe can be found here.
- 10 cups of cooked shredded chicken. You can use leftover baked, boiled, rotisserie, or even fried chicken. Make sure you aren’t using leftover chicken that has been sauced or overly seasoned. For example, I wouldn’t recommend using leftover barbecue chicken. Something like a simple salt and pepper baked chicken, poached chicken, or roasted chicken works best!
- 1 lime and lime leaves (optional)
- 1 green onion
- 1 teaspoon chicken bouillon
- dash of white pepper
- cooked rice
- shrimp crackers (optional)
How to make this spicy Indonesian chicken recipe
- Shred 10 cups of cooked chicken and set aside. If you are using my homemade Indonesian sambal recipe follow the recipe instructions listed in sambal recipe before starting this chicken with sambal sauce. Sambal recipe will take about 30 minutes to make.
- In a large pan, heat up sambal. If you are using sambal that isn’t oil based, you will need to add cooking oil and make adjustments. I highly recommend making this chicken with sambal recipe using my homemade sambal sauce recipe.
- Add in 1 teaspoon of chicken bouillon, dash of white pepper, squeeze of lime, and a few lime leaves if you have some. Mix everything together and simmer on low for a minute or so.
- Add in shredded chicken to sambal. Sprinkle chopped green onions. Adjust taste to preference by adding more salt, sugar, or lime juice.
- Enjoy chicken with sambal sauce over a hot bowl of white rice and shrimp crackers.

- 1 cup vegetable or canola oil
- 1 tsp salt
- 1 tsp sugar
- small squeeze of lime
