This flavorful and easy Chinese chicken salad is light, tangy, and sweet. The salad is delicious when served simply with romaine lettuce, shredded chicken, and crispy noodles, or you can jazz it up by adding sliced almonds, avocados, and mandarin oranges!

Chinese Chicken Salad Dressing
1/3cupVegetable oil
1/3 cupRice vinegar
3tbspSugar
2tbspSesame oil
1tspSesame seeds
1/2tspSalt
1/2tspBlack pepper
Instructions
Salad Dressing
Mix all ingredients in a small container. Cover with lid and shake to mix all ingredients together. Make sure to shake well before serving on top of salad
Chinese Chicken Salad
Shred cooked chicken. I prefer to use store bought rotisserie chicken to save time.
Clean and chop lettuce. Slice green onions.
Take out 1 bundle of bean thread noodles from the packaging. Use fingers to spread the noodles apart from each other and place in bowl until ready to fry
Using medium heat, heat up vegetable oil in medium sized pot. Line a plate with a couple of paper towels. Test oil to see if its ready by dipping one piece of bean thread noodles into the pot of oil. If bean thread noodles instantly expand then oil is ready to fry. Othewise, wait a couple more minutes and retest until oil is hot enough.
Once oil is hot, turn down heat to low-medium. Throw in a small handful of bean thread noodles and use frying tongs to swirl and flip. Place fried bean thread noodles onto plate lined with paper towels. Repeat with rest of bean thread noodles.
Assemble salad by placing a bed of lettuce in a large bowl. Top lettuce with chicken and green onions. Mix salad dressing and pour on top. Finish off by adding the fried bean thread noodles and extra sesame seeds. You can also add avocados, sliced almonds, and mandarin oranges!
