Garlic Fried Rice with Egg

A Japanese hibachi inspired garlic fried rice with egg that's so delicious and easy to make at home. Made with the best garlic soy butter sauce!

Ingredients
  

  • 4 cups cooked leftover rice
  • 3 eggs
  • 2 green onions
  • 1 small onion
  • 1.5-2 tbsp soy sauce

Garlic Soy Butter

  • 10 cloves garlic
  • 2 tbsp fresh minced garlic
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 1/4 cup olive oil
  • 1/2 cup softened unsalted butter
  • salt and black pepper

Garlic Soy Butter

  • The first step to making this garlic soy butter is to make a roasted garlic oil. Put ten peeled cloves of garlic in a small oven safe ramekin or bowl. Cover the garlic cloves with just enough olive oil to cover each garlic clove (about 1/4 cup olive oil). Afterwards, sprinkle with salt and black pepper and cover tightly with foil. Put in the oven or toaster oven for 20-30 minutes at 375ºF. Use a fork to check that the cloves are soft and tender before taking them out of the oven.
  • In a new bowl, separate the roasted garlic cloves from the olive oil. Set olive oil aside to use for other recipes. Then to the roasted garlic cloves, add 2 tablespoons of fresh minced garlic, 1/2 cup of softened, unsalted butter, 2 tablespoons of lemon juice, and 2 tablespoons of soy sauce. Mix everything together until smooth. Store garlic soy butter in an airtight container in the fridge until ready to use.

Garlic Fried Rice

  • Prepare garlic soy butter according to instructions above and set aside 5 tablespoons of garlic soy butter.
  • Use a fork to break up the leftover rice.*
  • Dice onions and cut green onions into small pieces.In a small bowl, scramble 3 eggs with 1/2 teaspoon of chicken bouillon or salt.In a large pan or wok, heat up 3 tablespoons of oil using medium high heat.
  • Add in diced onions and cook until soft (about 2-3 minutes). Move all the cooked onions to one side of the pan and add in eggs. Cook eggs to a soft scramble then add in all the leftover rice. Lower heat to low medium. Mix everything together.
  • Add in 5 tablespoons of garlic soy butter, 2 tablespoons of soy sauce, and green onions. Stir and cook until everything is mixed together and the green onions have softened (about 5 minutes). Enjoy garlic fried rice alone or topped with chili oil!

Notes

*It's best to use leftover rice when cooking fried rice. If you use fresh rice, it often leads to fried rice that is too mushy. You can choose any type of rice, however, jasmine or calrose are my favorite. Sometimes, I also like mixing rices for an in between texture.
If you don't have leftover rice, you can cook new rice the night before. Spread out the rice on a sheet pan and store in the fridge overnight. If you are desperate to make fried rice and are short on time, I recommend using a long grain rice and letting the cooked rice cool to room temperature before cooking the fried rice.
