Homestyle chicken noodle soup is my go to, no regrets choice. It’s usually what I end up choosing when a restaurant menu overwhelms me, or I’m at home and I just have no clue what to make for dinner. It’s quick, easy and quite healthy. In fact, at one point, I made this soup so much during Chicago’s crazy winters that Archie, who’s a man of habit and never gets tired of a repetitive meal, finally asked if we could have something else for dinner!
This homestyle chicken noodle soup recipe is perfect for when you have leftover chicken to use up. Whether it’s store bought rotisserie chicken, leftover baked chicken, or even leftover fried chicken, you can basically use it in this recipe! Just make sure you aren’t using chicken that has been drenched in sauce or overly seasoned. If you’re using leftover fried chicken or anything that has been crusted, make sure you’re only using the meat and not including any of the crispy skin or breading.
What you need to make homestyle chicken noodle soup
Other than the chicken, here are some other ingredients needed to make this recipe:
- Chicken broth
- Vegetable broth
- Egg noodles
- Onions
- Celery
- Carrots
- Minced garlic
- Chicken bouillon cube
- Butter
- Spices include: dried basil, oregano, parsley, garlic powder, salt, and pepper
Homestyle Chicken Noodle Soup
Ingredients
- 4 cups cooked shredded chicken
- 28 oz chicken broth
- 14 oz vegetable broth
- 1 1/2 cups uncooked egg noodles
- 1/2 cup onions
- 1/2 cup celery
- 1 cup carrots
- 1 tbsp minced garlic
- 1 tsp butter
- 1/2 tsp basil
- 1/2 tsp oregano
- 1/2 cube chicken bouillon cube
- 1/4 tsp garlic powder
- 1/2 tsp parsley
- salt and pepper to taste
Instructions
- Sauté garlic and butter in medium heat. Add in onions and celery and cook until tender.
- Add vegetable broth and chicken broth to pot and bring to a boil.
- Add in vegetables and cooked shredded chicken to pot.
- Add in basil, oregano, chicken bouillon, and parsley.
- Add salt and pepper to taste.
- Simmer for 20 minutes.
- While soup is simmering, cook noodles in a separate pot according to package instructions.
- Add in noodles during the last 10 minutes of simmering. Voilá, enjoy!
