While air fryer is preheating, clean and cut potatoes into bite sized pieces. Gold or baby potatoes are great for this recipe so you don't need to peel the potatoes, but you can use any type of potato you prefer.
Place all the cleaned and cut potatoes into a large bowl. Drizzle with oil and sprinkle lightly with salt. Don't over season as you will add more flavor with the furikake. Mix everything together.
Place potatoes into air fryer rack. For the crispiest potatoes, don't over crowd the rack and try to leave space between each piece. If you overfill your rack, the potatoes will steam and not get as crispy. You might have to air fry potatoes in batches depending on how big your air fryer is.
Air fry potatoes for 10 to 15 minutes or until desired crispiness. Use oven safe tongs or fork to toss potatoes after about 5 minutes to make sure they cook evenly.
While potatoes are cooking, mix mayo with sriracha to make the dipping sauce. Set aside.
Once potatoes are done cooking, place into large bowl and add in furikake seasoning. Toss well. Enjoy as a snack or as a side dish. Serve with sriracha mayo dipping sauce.
