Pisang Goreng (Fried Bananas)

A super crispy pisang goreng (fried banana) recipe that has a crispy sesame and coconut batter and is drizzled in a caramelized sugar glaze!

Ingredients
  

  • 2 Thai bananas or 1 plantain
  • 1/2 cup All purpose flour
  • 1/4 cup Rice flour
  • 1/4 tsp Salt
  • 1 tsp Sugar
  • 1/2 tsp Vanilla extract
  • 1 tbsp Salted butter
  • 2 tbsp Toasted sesame seeds
  • 3 tbsp Sweetened coconut flakes
  • 1 cup Cold water

Caramel Sugar Glaze

  • 1/4 cup sugar

Instructions
 

  • Peel bananas or plantains. Cut in half length wise and then cut into thin slices. Each plantain should result in about 8 pieces and each Thai banana should result in about 4 pieces.
  • In a large mixing bowl, mix all purpose flour, rice flour, salt, and sugar together. Add in 1 cup of cold water and mix until lump free. Melt butter in the microwave and add melted butter to batter. Add in vanilla extract, sesame seeds, and coconut shreds. Use a whisk to mix everything together until smooth. Batter should be a medium consistency similar to the thickness of half and half.
  • Put sliced bananas into the batter and coat banana pieces equally. Batter bananas in batches as necessary. Make sure all sides of the bananas are covered in the batter.
  • In a large frying pan, heat up 2 cups of oil or amount necessary to fill half the pan with oil to shallow fry. To test if oil is hot, add a dollop of batter. Once oil is hot and bubbling, turn down heat to medium. Carefully add in bananas in batches. Don't overcrowd the pan.
  • Use a spoon to drizzle more batter on top and on the sides of bananas in the oil. This will help create a textured and super crispy fried banana. After about 2 minutes, flip bananas and drizzle other side of bananas with more batter. Keep flipping bananas every 1-2 minutes until bananas are crispy and golden. Total frying time should be about 7-10 minutes.
  • In a large frying pan, heat up 2 cups of oil or amount necessary to fill half the pan with oil to shallow fry. To test if oil is hot, add a dollop of batter. Once oil is hot and bubbling, turn down heat to medium. Carefully add in bananas in batches. Don't overcrowd the pan.

After about 2 minutes, flip bananas and drizzle other side of bananas with more batter. Keep flipping bananas every 1-2 minutes until bananas are crispy and golden. Total frying time should be about 7-10 minutes. Once bananas are golden and crispy, remove from bananas from oil. Let bananas cool in a strainer or paper towels to remove excess oil.

Caramelized Sugar Glaze

  • Once all the bananas have finished frying, you can make an optional caramel glaze. In a small frying pan or pot, add in sugar. Try to spread sugar out evenly in pan and turn heat on low. Slowly heat sugar up until it has melted and turned into a brown caramelized liquid. Caramel glaze will be very hot so be careful when handling.
  • Place bananas on a glass plate and use a spoon to drizzle caramel glaze over bananas. Let caramel glaze cool and harden before serving. Enjoy as is or with a scoop of vanilla or coconut ice cream!
