Fried Spam with a runny egg is a match made in heaven. This spam and eggs sandwich with spicy mayo can be enjoyed as a quick lunch or indulgent breakfast sandwich.
Slice up spam to preferred thickness. Don't slice the spam too think or it will make the sandwich too salty. You will need two slices of spam for each sandwich you are preparing
In a small ramekin or bowl, mix 1 tablespoon of mayo with 1 tsp of sriracha hot sauce. Adjust taste to preference. If spicy mayo isn't spicy enough, add more hot sauce little by little until to preference. If the spicy mayo is too spicy, add more mayo. Put aside.
Toast two slices of bread.
In a frying pan, using medium heat, heat up 1-2 tablespoons of oil. Once heated, put in your spam and fry both sides. Spam is precooked so you don't have to worry about undercooking spam. Just cook to your preference. Once cooked, take out and drain spam on plate of paper towels.
Reheat the oil on medium to high heat. Crack in two eggs. Once the whites start to solidify and the edges turn crispy, flip the eggs. In about 30 seconds, off the heat. Remove eggs from pan and let them drain on plate of paper towels. If you don't want a runny egg, you will need to cook your eggs for longer.
How to assemble spam and eggs sandwich with spicy mayo
To assemble your sandwich, spread spicy mayo on one or both slices of toast. Up to your preference. On one slice of toast with the spicy mayo spread, add in cheese and top with spam, eggs, and other side of toast. Slice in half and enjoy!
