This frozen yogurt bark recipe is so easy to make and great for adults and kids. You can mix in any of your favorite fruits or nuts. This recipe calls for berries and granola however, it’s so easy to customize depending on whatever you’re craving or already have in the pantry!
I am currently in my second trimester of pregnancy and so far it’s been pretty smooth sailing. Other than feeling tired ALL ZEE TIME, I didn’t really have any other pregnancy symptoms and don’t have too much to complain about. Even the food aversions and cravings aren’t to the level of what I had expected to have while pregnant. So far, not a single pickle craving yet!
However, the past couple of weeks, my sweet cravings have been insane and just in time for my gestational diabetes exam next week! Warm cookies topped with ice cream are constantly on my mind. Every trip to the mall requires a quick pit stop to See’s Candies. And as for boba (a.k.a. tapioca pearls or bubble tea), I have absolutely no self-control and have had to ask Archie to monitor my intake and deny any weekday requests.
Don’t get me wrong. I am pregnant, and I intend on experiencing the full pregnancy experience. This includes giving the baby what she craves, and I expect my weight to continue to pack on these next few months. However, the baby’s health is my highest priority, and I am trying my best to practice moderation. So I’ve had to find healthy-ish solutions to these insane cravings and this frozen Greek yogurt berry bark is exactly what the doctor ordered!
I keep a batch of this frozen yogurt bark in my freezer and pretty much snack on them throughout the day. The Greek yogurt provides a great source of protein and calcium. I mix in a little honey, vanilla extract, and lemon juice to give them a satisfyingly sweet bite and top with fresh berries and granola. You can also swap these toppings with other fruits, nuts or even dark chocolate chips and coconut flakes. This frozen Greek yogurt bark isn’t a miracle cure to all my sweet cravings, but they get the job done or at least until the weekend comes!
Frozen Yogurt Bark
Ingredients
- 2 1/2 cups plain Greek yogurt
- 1/4 cup honey or agave
- 1 tsp vanilla extract
- 1 tsp lemon juice
- assortment of berries
- granola
Instructions
- Prepare berries by washing, drying and slicing fruit as preferred
- Line large sheet pan with parchment paper
- In large bowl mix together yogurt, honey and vanilla
- Spread yogurt evenly on top of parchment paper
- Top with berries and granola or other preferred toppings. Slightly push toppings into yogurt
- Place evenly into freezer and freeze for at least 3 hours or until completely frozen in the center of bark
- Use clean hands to break bark into pieces. Best enjoyed immediately but can be stored in freezer safe container or ziplock for up to a week. Voilá, enjoy!
