If spam had a soulmate it would be with a crispy, runny fried egg. This spam and eggs with chili oil recipe is an easy but satisfying meal and one of my favorite spam recipes. Fried caramelized spam pairs perfectly with crispy eggs fried in chili oil. I love having this spam recipe with a simple plate of white rice or to elevate a bowl of ramen noodles, especially Indomie goreng noodles!

What is spam and what is spam made of?
Spam can be a mystery meat to most, but to some this canned luncheon meat is probably one of your favorite childhood meals. Growing up, we always had a can of spam in the pantry. My mom cooked so many spam recipes. It was and still is the star of my mom’s famous spam, bacon, and egg fried rice. It’s the secret ingredient in her pastry puff sausage rolls known as sosis brood or Dutch Saucijzenbroodjes. Spam was also one of the easy weeknight meals we’d have as a kid. We’d happily scarf down spam with eggs, rice, and kecap manis or Maggi sauce.
Spam is a canned luncheon meat that was created in 1937. Today, there are 15 different varieties of spam ranging from its original flavor to teriyaki. Did you know that spam is sold in 44 countries and 12.8 cans of spam are eaten every second? According to Hormel Foods, spam is mostly a mixture of ground pork and ham. There are five other ingredients added for flavor and to retain freshness, including salt, water, potato starch, sugar, and sodium nitrate. This mystery meat isn’t such a mystery after all!
How to make this spam recipe with chili oil egg and rice
- Prepare and cook rice or noodles according to packaging.
- Cut spam into small bite-sized cubes. Using medium-high heat, heat up 1 tablespoon of neutral oil in a frying pan. Add in spam when oil is hot and stir fry for ~3 minutes or until caramelized and golden brown. Leaving as much oil as possible in the pan, remove spam from pan and strain on paper towel lined plate.
- To the previous frying pan with oil leftover from frying spam, add in 2 tablespoons of chili oil. Turn heat up to medium and stir until chili oil begins to bubblee (about 30 seconds). Turn down heat if chili oil begins to brown or burn too quickly.
- Crack 2 eggs side by side to the chili oil in the frying pan. Cover pan with a lid and cook for about 2 minutes or until whites of egg have cooked to preference. Uncover frying pan and use a spoon to carefully spoon hot oil on top of the egg. Keep spooning hot oil onto eggs for another 20 to 30 seconds or until fried eggs have cooked to liking. Turn heat off. Serve chili oil eggs with fried spam and on top of noodles or white rice.
How to store spam
Unopened canned spam should be kept in a cool, dry pantry for up to expiration date that is printed on the can packaging. Opened spam should be stored in an air tight container or sandwich bag in the fridge for up to a week. Cooked spam should be stored in the fridge and consumed within 3 to 5 days.
Can you eat spam straight out of the can?
Since spam is a cooked meat, technically it is safe to eat spam straight out of the can. However, and this is a big however, I have personally never tried eating spam straight out of the can. I would highly recommend that spam is either baked, pan fried, or air fried before you consume it. You can even grill or microwave spam (after removing from can of course).
